Simple Supper: Steak salad recipe
Steak salad is a light supper which also keeps the meat lovers in the house happy


Serves 2
Ingredients 2 pieces of good quality steak (I used 200g sirloin) 2 large handfuls of winter salad leaves or rocket Dressing Salt and freshly ground black pepper Butter Parsley, finely chopped
Method Remove the steak from the fridge ahead of cooking to bring up to room temperature. Heat a griddle pan to a high heat and massage a little olive oil and seasoning into the steaks. When the pan is smoking hot add a little butter and then cook the steaks on each side for 3 minutes. Cut the steak into thin strips and lay across the salad leaves, drizzle the juices from the pan over the steak and scatter the parsley on top. Dress generously with a rich salad dressing and serve immediately.
Particularly good with mashed potato.
