Simple Supper: Cheesy Baked Potatoes recipe
Seriously easy and delicious baked potatoes
Serves 2
Ingredients
2 large potatoes 200g cheddar cheese, grated Butter (salted) Sea salt and black pepper
Method
Bake the potatoes in a hot oven (200°c) for one hour. Remove the potatoes from the oven and with a sharp knife cut a disc shape out of the skin on one of the flat sides. With a spoon, scoop the potato from out of the skin, being careful not to damage the shell. Mash the cooked potato with the grated cheddar adding a little butter and seasoning. Carefully replace the potato into the skins and put the top back on. Bake for a further 20 minutes and remove from the oven. Delicious with ham

Country Life is unlike any other magazine: the only glossy weekly on the newsstand and the only magazine that has been guest-edited by His Majesty The King not once, but twice. It is a celebration of modern rural life and all its diverse joys and pleasures — that was first published in Queen Victoria's Diamond Jubilee year. Our eclectic mixture of witty and informative content — from the most up-to-date property news and commentary and a coveted glimpse inside some of the UK's best houses and gardens, to gardening, the arts and interior design, written by experts in their field — still cannot be found in print or online, anywhere else.
