Simple supper: Avocados with dressing
Avocados are a very easy, nutritious and surprisingly filling supper snack, and undeniably easy to prepare
Ingredients 1 avocado per person (bought a few days in advance to ripen) Good olive oil Balsamic vinegar Salt and freshly ground black pepper
Method This is a very quick and easy first course or a very light supper snack. Slice the avocados lengthways and remove the stone. In the hollow left by the stone, drizzle a little olive oil, a drop or two of balsamic vinegar, a grind of black pepper and a pinch of salt. If you're home late, this is a very easy, nutritious and surprisingly filling supper snack.
